Good news: After lots of testing (10 rounds!) we cracked the code for the ultimate classic vegan chocolate chip cookie.
It’s buttery, salty-sweet, studded with melty chocolate chips, crisp on the edges, and tender in the center. Swoon! Plus, it’s made in just 1 bowl with 9 simple ingredients. Let us show you how it’s done!
We’re no strangers to chocolate chip cookies (exhibits A, B, C, D, E, & more). But what we were missing on the blog was a classic, not gluten-free, chocolate chip cookie. Not anymore!
How to Make Vegan Chocolate Chip Cookies
To “veganize” classic chocolate chip cookies, the main ingredients to swap out are eggs and butter. We opted for flax eggs as a binder because they tend to work well in cookies and are easily accessible.
And for butter, we went with vegan butter for a classic buttery taste. We also tested with coconut oil, but it’s more finicky, leads to issues with spreading, and yields oily cookies.
For dry ingredients, we kept it classic and accessible with all-purpose flour and baking powder for leavening. And for sugar, we included both cane and brown sugar. The addition of brown sugar adds a slight caramelly flavor.
To infuse these cookies with maximum deliciousness, we included generous doses of vanilla, sea salt, and chocolate chips. The result is gooey, sea-salty, chocolaty goodness in every bite!

Classic Vegan Chocolate Chip Cookies (1 Bowl!)
Ingredients
- 2 Tbsp flaxseed meal (to make flax eggs)
- 5 Tbsp water (to make flax eggs)
- 1/2 cup packed organic brown sugar
- 1/3 cup organic cane sugar
- 1/2 cup vegan butter, room temperature (we prefer Earth Balance // 1 stick = 1/2 cup or 112 g)
- 2-3 tsp vanilla extract
- 1 heaping cup unbleached all-purpose flour (1 cup + 2 Tbsp as original recipe is written*)
- 1 tsp sea salt (plus more for topping)
- 1 tsp baking powder
- 1 cup vegan semi-sweet chocolate chips (we prefer Enjoy Life)
Instructions
- In a large mixing bowl, prepare your flax eggs by mixing flaxseed meal and water and let rest for 5 minutes. Add in brown sugar, cane sugar, vegan butter, and vanilla (start with lesser end of range, and add additional 1 tsp for stronger vanilla flavor if preferred). Mix with electric mixer until creamy and pale in color (see photo) — ~ 1 minute.
- Add flour, salt, and baking powder and stir by hand with a wooden spoon until fully combined. Fold in chocolate chips until just combined.
- Put the bowl of dough in the refrigerator to chill for 40 minutes.
- Preheat to 375 degrees F (190 C) and line 2 large, rimmed baking sheets with parchment paper.
- Remove the cookie dough from the refrigerator and begin scooping dough in 1 ½ Tbsp scoops (we like this scoop) onto prepared baking sheets. Space cookies 2 inches apart to account for spreading. Bake cookies on a center rack for 12-15 minutes or until edges begin to turn golden brown. Option to sprinkle with a pinch of sea salt or Maldon salt while still warm for extra flavor contrast and texture.
- Let cool for 10 minutes on the tray before enjoying! Perfect with a glass of dairy-free milk or a latte.
- Store leftovers covered at room temperature up to 5 days, or in the freezer for up to 1 month. Enjoy at room temperature for best texture.

Lord have mercy, these are divine!! I’ve recently gone vegan for health reasons but really missed my salted chocolate chip cookies. So grateful to find this post. I used Miyokos butter cause that’s what the store had and I don’t own a scoop so I just tablespoon dropped them onto my silpat baking mat they came out sinful! If you wait until they’re completely cooled (like 2-3 hours) you will be justly rewarded. Trust. So bomb!

These were very good! I had some aquafaba lying around in the fridge, so I added a few tablespoons to the flax egg just for kicks. The only thing that didn’t quite work was the oven temp. I only have one cookie sheet, so the first batch I did for about 11 minutes at 375, and they came out a bit burnt on the bottom; I did the second batch for 12 minutes at 350 and they came out much better! Could be because my cookie sheet is dark, or could be an oven temp calibration issue, but it’s something to watch out for.

These are so delicious!!!! Seriously, can’t stop eating them! I didn’t have enough vegan butter, so I subbed about 1/4 cup of peanut butter and I’m in awe. I also used spelt flour bc I don’t really buy AP anymore. Such a simple recipe but oh so good. I want to make another batch but ran out of flax meal. I’m going to grind down chia and use that. Hi Chapin, we’d recommend using less flax + water (to help them crisp up) and baking in an 8 x 8 inch baking pan lined with parchment paper. Bake for 25-28 minutes. Let us know how it goes!

Nice cookies but I found I had to cook them almost 10 minutes more than the recipe said. They were barely cooked at 15 min without any browning. I believe my oven temp is pretty accurate, so curious as I haven’t seen this issue in the comments/ratings.

Hi Chris, grass fed butter would work. Salted would be extra tasty, but unsalted works too! We aren’t sure about the monk fruit/erythritol sub as we haven’t experimented much with that type of sweetener, but it might work. Our main hesitation would be the cookies may be more crumbly. The flavour was really nice but something went wrong with the texture of mine. The cookies had a dry bread-like texture (was still soft in the centre and crispy around the edges). I didn’t have any brown sugar, so subbed white sugar – for everything else I followed the recipe. Would the sugar substitution be enough to cause this.

This is unreal, despite the amount of modifications I made. I used coconut sugar only, and used a blend of almond and coconut flour instead of all purpose. I also used a chia egg. I just found Minimalist Baker about a month ago. I enjoy it so much! Thank you for all of the wonderful inspiration. I followed the needed ingredients but tweaked what kind I used for a few things. I did use an Earth Balance vegan butter stick (1/2 c).
– For sweeteners, I used Truvia brown sugar – mix of stevia and b. sugar (1/4 c) and I used Swerve (erythritol) confectioner’s for the cane sugar (1/3 c).
– For the flour, I used a mix of oat flour and regular all purpose flour (50/50).
– I used 2 Tbs of Orgain vanilla protein powder for the extra 2 T of flour (vegan).
– I used choc chips and also added coconut flakes, raisins and walnuts too! They were yummy. Had 2 with my coffee this morning :-)
Thanks for inspiring me to go eggless with vegan butter. I used to bake a lot more like that years ago. My husband is trying to see if he has a sensitivity to eggs so I am trying to get creative!

Having made a few of your recipes I know that I can expect them to turn out good but even so I was surprised at how delicious these turned out! These cookies were super tasty, but I had some trouble when I made this. Decided to leave the butter out to soften overnight and when I mixed the egg, butter, and sugar together there were little pieces of butter that wouldn’t mix. Also, when I baked the cookies they came out rather flat and didn’t rise much.

The only modification to ingredients that I made was using whole wheat pastry flour instead of all purpose. Let them chill for at least 40 minutes. Baking powder was unopened, so I don’t think that’s the issue. Only thing I did different was making the cookies a little bigger.

Whole wheat flour has more moisture in it than white flour, so it definitely throws off recipes if you try and substitute it 1:1.

I made these not too long ago, I don’t have flax on hand and so use a different egg replacer (I think that’s the culprit), the dough ended up being a super soft sand texture, I tried baking a couple cookies and they could have been used as golf balls! I added a literal dash of coconut milk to the dough and it kind of broke, not sure how else to say it. I mixed that up super well, baked a few cookies off and they were perfect!! Weird science right there 😄. Next time I think I will just add a tablespoon of extra liquid and see what happens! Thanks for the recipe!!

Delicious. I use Miyoko’s butter instead of earth balance in one batch and found the recipe to be slightly less greasy. Also, made a batch with bittersweet chips, which complimented the sea salt well. I’ve made a recipe for years with an apple sauce binder and was looking for a change. This recipe was perfect!

Those could both contribute to a flour taste. We wouldn’t think using real butter would cause any issues, but admittedly haven’t tried with that modification.

I made this today with only very minor changes: I used Miyoko’s salted butter instead of Earth Balance and added tiny bit of cinnamon.
I’m so glad I only baked a batch of four and froze the rest, because I would have eaten them all! They were so delicious, and even though they were vegan I really couldn’t tell the difference between these and a classic tollhouse cookie.

Ok. I typically do not comment but wow, these cookies are pure perfection. It is so hard for me to make tasty vegan cookies or brownies (I flopped with the vegan vanilla cupcakes, totally my fault bec of the flour I used) but these are exceptional. Even I can make them taste good, which is saying something. I followed the recipe to a tee.
Bottom rack in oven cooks a little browner than top rack. I prefer the top rack, they tasted lighter and almost fluffy. Weird description I know but none the less…DELICIOUS!

Hmm. I made these to the recipe with the exception that I realized too late I was out of vanilla, so I omitted it. Without the vanilla, they mostly tasted like Earth Balance + chocolate (to be expected, I suppose). They also spread a little more and were flatter/crispier than I expected – maybe I should have chilled them even longer? Or perhaps I didn’t cream the wet ingredients well enough? Still gonna eat ’em all though.

Hi Juliette, we used a pretty generous amount of vanilla in this recipe for flavor, so we do think that’s likely the issue with the taste. For spreading, chilling longer should help or adding a bit more flour!

Oh NO. I made these for the 2nd time in a week. The first time I followed the recipe as written and they were great as I said in my previous review.
This time I upped the vanilla to 3T and tried dark chocolate chips. Boom! These are perhaps a little more intense than the originals because of the dark chocolate, but the extra vanilla mellows them nicely.
We can’t decide which we like better so I recommend making both. :-)
Oh, and I made the dough in the evening, popped the metal KitchenAid bowl into the fridge overnight, and baked them the next day. That worked really well for my schedule and the cookies rose nicely, too.

These cookies will remind you of the classics and sneaking dough out of the tube in the fridge. I used aquafaba instead of flax because its what I had, and I mixed the aquafaba, sugar, and butter all together at once. They were definitely fluffier than the original recipe, but still chewy and gooey on the inside and I suspect I might have whipped up the butter mix a little too long (i just made vegan merengue the other day and I was really in the beat it forever mindset).
11/10 recommend these cookies for any occasion

I made these GF & they are 10/10 amazing!! Instead of the regular flour I used 1/2 C of oat flour, 1/2 C bob’s red mill one to one flour, and 2 Tbsp potato starch and everything else as the recipe says! A really solid vegan chocolate chip cookie recipe!! I put the dough in the freezer for about 15 minutes, instead of 40 in the fridge and I think it worked just as well for chilling. Baked them for 12 minutes, but next time I will do 13-14 minutes for a crisper cookie. Don’t skip out on adding the salt at the end!!! So good!

For those curious- I used regular unsalted butter because that’s all I had. I also let them chill in the fridge for ~90 minutes so that there was minimal spreading (I like my cookies thick lol). Finally, I sprinkled them with some local, coffee infused flaked sea salt! *chefs kiss*

The minute I saw you publish this recipe I knew I had to try it out! The only change I made was using half chocolate chips and half chocolate chunks but other than that I followed the recipe and instructions exactly. I ended up baking them for 12 minutes and wow, they were so delicious! The flavour was on point and I loved the crispy edges and chewy centres! However, I did have a slight issue with the bottoms getting a bit too brown, almost burnt. Is there something I could do next time to prevent this from happening? x

I really like minimalist baker, but I am not vegan. Is this recipe fine if you switch the flax eggs & vegan butter for regular eggs and butter?

Hi Zoe, we haven’t tried that way so we’re not sure. Regular butter shouldn’t make much difference. Let us know if you do some experimenting!

I made with non-vegan butter and 2 eggs and it came out just like the photo. Crispy edges and chewy center! I used good quality chocolate chips with 65% cacao. I also added about 1/2 teaspoon of cinnamon because I like cinnamon. SO good. Thanks for another great recipe!

Hi Desen, perhaps you could try making vegan butter (using a recipe online). The closest alternative is coconut oil, but it’s more finicky, leads to issues with spreading, and yields oily cookies.

These are delicious! Mine seemed very gummy and possibly a bit too wet before baking. They spread to be very thin cookies once baked, but still are absolutely delightful. They have a nice crunch while still being chewy. So glad to finally have a MB classic chocolate chip cookie!

Hi Sahara, we haven’t tried with those modifications, but suspect it would yield a different texture- more dense for oat flour and more crumbly for almond flour. Let us know if you do some experimenting!

Boy, I sure wish more of your recipes could be low-fat. So many have at least one ingredient, like vegan butter, or lots of nuts, that drive up the fat content, and so many of your readers are vegan because they are looking for truly healthy (which generally means lower fat) options.

Hi Carrie, thanks for the feedback! Fat does help with texture so that can be a bit tricky, but we’ll see if we can come up with an alternative that doesn’t compromise on taste/texture.

Hi Caroline, you would use the same amount, but we found coconut oil to be finicky and it leads to issues with spreading and yields oily cookies. For vegan butter, Earth Balance buttery sticks work best. We also like Miyokos, but it’s more prone to melting quickly.
